Cauliflower Mac and Cheese Keto Dish Recipe

Ingredients:

  • 1 large head of cauliflower, chopped into small florets
  • 4 tablespoons of butter
  • 4 tablespoons of almond flour
  • 2 cups of heavy cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of shredded parmesan cheese
  • 2 cloves of garlic, minced
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried thyme
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.

  2. Rinse the cauliflower florets and chop them into small pieces. Spread them evenly on the prepared baking dish.

  3. Melt 2 tablespoons of butter in a small saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  4. Add the almond flour, onion powder, dried thyme, salt, and black pepper to the saucepan. Whisk until well combined and cook for 2-3 minutes until the mixture is golden brown.

  5. Gradually pour the heavy cream into the saucepan, whisking constantly. Cook for 5-7 minutes, stirring occasionally until the sauce thickens.

  6. Remove the saucepan from the heat and add the shredded cheddar cheese and parmesan cheese. Stir until the cheese is fully melted and the sauce is smooth.

  7. Pour the cheese sauce over the cauliflower florets, using a spoon to spread it evenly.

  8. Melt the remaining 2 tablespoons of butter in a small saucepan over medium heat. Drizzle the melted butter over the top of the cauliflower and cheese sauce.

  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.

  10. Remove the foil and bake for another 5-10 minutes until the cauliflower is tender and the cheese is bubbly and golden brown.

  11. Garnish with chopped parsley (optional) and serve hot.
